POTATO & LEEK SOUP Leek & Garlic Seasoning
Serves 4 to 6
8 ounces diced ham
3 tablespoons Leek & Garlic Seasoning
2 celery ribs, chopped
4 red potatoes cut into 1 inch cubes
4 cups chicken broth
2 cups water
Salt & pepper to taste
½ cup evaporated milk
2 tablespoons cornstarch
1 tablespoon water
1 tablespoon chopped fresh parsley
1 tablespoon oil
1. In a large pot, cook together 1 tablespoon oil, Leek & Garlic Seasoning and celery over medium heat until celery begins to soften, about 5 minutes.
2.Add ham, potatoes, chicken broth, 2 cups water, salt & pepper to taste, cook over medium heat until potatoes are tender. Reduce heat to medium low and stir in evaporated milk.
3.In a small bowl, mix together the cornstarch and 1 tablespoon water until combined, stir into soup and heat until the soup thickens. Stir in chopped parsley and serve.
