ITALIAN PORK AND POTATO CASSEROLE Traditional Italian Seasoning
6 cups red skin potatoes, washed and sliced
¼ cup water
½ teaspoon salt
30 ounces tomato sauce
3 tablespoons Traditional Italian Seasoning
2 teaspoons sugar
½ teaspoon Garlic Pepper Seasoning
6 boneless pork loin chops (about 6 ounces each)
¼ cup shredded Parmesan cheese
Salt & pepper to taste
1. In a medium bowl; combine tomato sauce, Traditional Italian Seasoning, salt and sugar.
2. Place potatoes and water in a microwave safe dish. Cover and microwave on high for 5 minutes or until just tender; drain.
3. Place potatoes in a 13 X 9 inch baking dish coated with cooking spray. Sprinkle with Garlic Pepper Seasoning. Top with pork chops and tomato sauce mixture. Cover and bake at 350˚F for 40 to 45 minutes or until a thermometer reads 145˚F and potatoes are tender.
4. Sprinkle with Parmesan cheese. Bake uncovered, 3 to 5 minutes longer until cheese is melted.
