CAJUN PAN FRIED SHRIMP Cajun Seasoning

3 tablespoons brown sugar
4 tablespoons Cajun Seasoning
2 Lbs peeled de-veined uncooked jumbo shrimp, tails left intact
4 tablespoons olive oil (divided)

1. In a medium bowl, mix together the sugar and Cajun Seasoning. Add the shrimp and toss to coat. Cover, chill and let stand for at least 1 hour for flavors to develop.
2. Set a large skillet over high heat. Heat half the oil. Add half the shrimp and cook, about 1 minute each side, turning over half way through the cooking process. Repeat for remaining shrimp.

The shrimp may be cooked on the barbecue grill. Get the grid really hot, about 10 minutes on a gas grill. Reduce the flame to medium heat. Brush the shrimp with oil, set them on the grid and grill until grill marks form, about 1 minute per side. If the grill marks don’t form the shrimp will still color up nicely.
